The burger came up through Penang’s night stalls and never left - buttered buns on a flat-top grill, the patty smashed thin, wrapped in paper for the walk home. It moved up the street into weekend markets and chef-led kitchens, putting Penang produce between brioche buns.
But the sauce on the counter never kept up - the same sweet bottled chili, decade after decade. So this bottle was built for both ends of that street: a thin vinegar base that cuts through flat-top grease, and a warm nutmeg finish that holds its own on a chef’s patty.

Why only 100ml?
100ml is exactly the right size. Small enough to finish while the nutmeg is still singing. Big enough to last through dozens of meals.
No preservatives means no half-litre bottles sitting in the fridge for a year. You finish it. You open a fresh one. The recipe stays honest.
The 100ml glass bottle is the only format we make. It is the amount a real family kitchen actually uses while the sauce is at its best.
How spicy is it?
Mild to medium. Most hot sauces race to the top of the Scoville scale. We went the other direction.
Tanjong Sauce® is built on three layers that arrive in sequence: first the nutmeg opens with a warm sweetness, fragrant and almost floral. Then garlic, ginger and onion bring savoury depth on the second beat. Chili comes last, settling in as a quiet warmth that lingers rather than burns.
The dose is a few drops. More is not better. If you want to suffer, buy a ghost pepper sauce. If you want your food to taste more like itself, a few drops of Tanjong Sauce®.
Is it Halal? Vegan?
Yes to both. Eight ingredients, every single one plant-based: nutmeg, chili, garlic, ginger, onion, vinegar, sugar, salt. No animal products. No alcohol. No hidden anything.
Certified JAKIM Halal by Malaysia’s Islamic development authority under Malaysian Standard MS 1500. Certified MeSTI by the Ministry of Health. Made in a clean, inspected facility in Simpang Ampat, Penang.
The recipe has been the same since 1970 - long before either term existed. We didn’t have to change anything to earn certification. It was already clean.
How long does an opened bottle last?
Refrigerated after opening, six to eight weeks at peak flavour. The vinegar and salt act as natural preservatives - the sauce stays safe to eat for several months beyond that. But ‘safe to eat’ and ‘worth eating’ are not the same thing.
The nutmeg’s fragrance is the first thing to fade. By week eight, you will still have a good hot sauce, but not the full experience. That is why we make 100ml bottles - so you finish it before the nutmeg has a chance to quiet down.
Unopened bottles have a 24-month shelf life at room temperature. Keep them out of direct sunlight.

It is a thin, vinegar-based hot sauce - pourable, not a thick paste. The vinegar carries the flavour and cuts through fried and grilled food, while the nutmeg leaves a warm, aromatic finish no other hot sauce has.
Does it contain turmeric or MSG?
No turmeric. The bright orange-red colour comes entirely from chili powder. The signature note is nutmeg - that is the point of the sauce.

How is it made?
The eight ingredients are blended in powder form for a uniform taste in every bottle - mixed and bottled the same day, in small batches, by hand.
The same eight ingredients in the same proportions, batch after batch since 1970. No reformulations. No shortcuts. Slight variation between batches is the point - it is a hand-made sauce, not a factory formula.
Does it go with Asian food or just burgers?
Both. The sauce was built for Penang itself - for curries, marinades, seafood, noodles and fried chicken as much as for burgers and pizza.
The thin vinegar base cuts through grease on anything fried, grilled or crispy. The nutmeg finish works on Malay, Chinese, Indian and Western cooking alike. Ayam goreng, ikan bakar, fried rice, noodles, eggs, seafood - a few drops on any of it.

What is the lighthouse on the label?
The lighthouse and ferry on the label are Penang’s sailing heritage - the island’s history as the spice trade’s great port. Nutmeg arrived in Penang in the early 1800s and the island became the spice’s second home.
Tanjong, the old Malay name for Georgetown’s cape - Tanjong Penaga - is where the island began and where that trade docked. The label carries the story the way the sauce carries the nutmeg: quietly, and all the way through.
